Cod and Spinach in Foil Packets

It's the Lenten season and I am always trying to come up with seafood/fish recipes to make sure we have our Friday meals covered.   One of my favorite ways to prepare fish is to simply season it and steam it in foil packets.  This is such a perfect way to seal in all that great flavor with very little effort.  
My family also likes that they can customize their own packet with the vegetables they want in their meal.   Everyone loves spinach in my house so I placed a beautiful cod filet on top of a bed of spinach, sliced onions and bell peppers.  My son is not a bell pepper fan so he chose to keep them out and add more onions and spinach.  Hey, if he likes it and I get him to eat more spinach and a beautiful piece of cod... I'm all for it.

Then all I needed to do was make a quick and simple marinade with fresh lemon juice and Mazola® Corn Oil to drizzle over each piece of fish.  After everyone customized their own packets, I sealed the packets up and steamed them in the oven.

These foil cod packets were full of flavor and we ate them over a bed of brown rice.  This is an easy meal to pull together after everyone gets home from work and school.  The clean up is also a breeze since the foil packets keep the baking tray and dishes clean.  So this Lenten season, or any time of the year, remember to keep this quick and easy cod dish in your recipe box. 




Ingredients:
1 1/2 lbs fresh cod filet
8oz spinach leaves 
1-2 lemons
Bell peppers (as desired)
Onion sliced 
salt and black pepper to taste
red chili flakes
Mazola Corn Oil 

 
 Marinade:
1 Tbs Fresh lemon juice
1 1/2 Tbs Mazola Corn Oil
1/4 tsp granulated garlic powder
1/4 tsp dried thyme 
red chili flakes (to taste)

Note:  You can also change the vegetables in the foil packet and use green beans, asparagus, carrots etc...

Directions:
Brush foil with a little  Mazola Corn Oil.  Then place a bed of fresh spinach.  Next place peppers and onions and season with salt and black pepper.


Brush each piece of cod with some Mazola Corn Oil and place it on top of the vegetables.  Then season the cod well with salt, black pepper and red chili flakes. 


 




Pour the prepared marinade over each piece of fish and top with two slices of fresh lemon.  Fold all sides of foil up and seal. Place all the packets on a baking tray and bake at 400 degrees for 15-20 minutes (or until fish is flaky and cooked through).  Allow the packets to remain unopened for 2-3 minutes before serving.  Serve with rice or salad.  Enjoy.
