2 Minute Microwave Mug Omelet

Yum
When you are a busy mother of two young kids, getting out the door in the morning with a good nutritious breakfast in your belly can be tough.  I was ecstatic about this easy and delicious 2 Minute Microwave Mug Omelet.  No frying pan necessary.  I saw this idea in a magazine advertising eggs and the concept was so intriguing. I knew I had to give it a try with my own recipe.  When I pulled the mug out of the microwave I seriously did a happy dance.  This omelet was light, fluffy and so very easy.  I only had one small bowl and my coffee mug to wash after it was done so that was good too.  You can customize this omelet with any add-ins.  I suggest if you want to do this for several days in a row, have all your add-in ingredients prepped and ready to go in a partitioned Tupperware or Ziploc bags and just toss into the omelet as you wish.  Everyone has two minutes to spare for a healthy breakfast and this one is perfect.

Ingredients for One Mug Omelet:
1 large egg
2 Tbs milk
salt and black pepper to taste
cooking spray

Add-ins:
raw onions diced
green peppers ( I used defrosted frozen diced green bell peppers)
finely diced jalapeno
shredded cheese (cheddar, etc..)
crumbled cooked sausage
diced cooked ham
cooked crumbled bacon

Directions:
In a bowl beat one egg, a splash of milk, salt and pepper well.  Then add the add-ins of your choice and mix well.  Spray a microwave safe mug with cooking spray then pour in the omelet mixture.  Top with some extra shredded cheese and put in the microwave for 2-3 minutes (depending on your microwave wattage).  I put it in for 21/2 minutes.  Serve hot. Enjoy.

  1. This is yummy! It's on my oldies list for some time now.
It can also be done with whole egg, in that case you must cover the mug.

  12. MUG RECIPES!! I much prefer this to the hot mess of bland chocolate cake I attempted a week or so ago. This would be awesome as a quick breakfast before work :D Fabulous.

  13. My mother in law was telling me about making eggs in the microwave when they were on vacation in a hotel room. Hers didn't sound too good but your photo looks pretty delicious. I will have to check this out. During the week eggs are too much of an effort most days.
